This project explores how the physiological and behavioral differences between various bee species influence the quality and biological activities of honey, using Longan honey from Thailand as a model. While Longan honey is a major monofloral product in Asia, research comparing it across different honey bee and stingless bee species remains limited. This study characterizes the physicochemical profiles, bioactive compounds, and microbial communities of Longan honeys produced by five distinct species: two honey bees (Apis mellifera and Apis cerana) and three stingless bees (Tetragonula laeviceps, Tetragonula pagdeni, and Heterotrigona itama).The research was conducted at the Bee Biology Lab, National Chung Hsing University, using standardized orchard settings in Chiang Mai to control for floral origin. By employing high-throughput sequencing of the 16S rRNA gene (V3-V4 region) and comprehensive biochemical assays, this project aims to provide a baseline for understanding species-specific "microbial signatures" and the therapeutic potential of diverse honey types. The findings offer valuable insights for honey authentication, quality control, and the development of functional food products.
