Microbial Contamination of Ready-to-Eat Fufu Produced from Fufu Pounding Machines in the Mampong Municipality of the Ashanti Region, Ghana"

This study investigated the microbial contamination of ready-to-eat fufu produced from fufu pounding machines in the Mampong Municipality of the Ashanti Region, Ghana. A total of 20 fufu samples were aseptically collected from three communities and analyzed in the laboratory for microbial load and presence of pathogens. Standard microbiological techniques were used to isolate and identify microorganisms such as Salmonella spp., Shigella spp., Klebsiella spp., Escherichia coli, and Staphylococcus aureus. The results revealed that all samples had at least one of these organisms, with Shigella spp. and Staphylococcus aureus being the most frequently detected. Additionally, a structured questionnaire administered to machine operators showed poor hygienic practices, such as limited handwashing, lack of glove use, and uncovered hair during food handling. The study concludes that ready-to-eat fufu from pounding machines poses a significant public health risk due to bacterial contamination. The findings call for stronger hygiene education and improved food safety measures among machine operators and food vendors.
