Ishizuchi-Kurocha is a post-fermented tea produced in Saijo, Ehime, Japan. In this study, we have sequenced the genome one of the strains to reveal the mystery of dynamics in the tea. These data contribute to a better understanding of traditional post-fermented tea all over the world.
