Gene database of Fructilactobacillus sanfranciscensis strain LS451

Fructilactobacillus
sanfranciscensis is a heterofermentative lactic acid bacteria that through
the production of lactic acid and acetic acid, gave bread its characteristic
taste. This work provides the gene database of F. sanfranciscensis after
parsing the annotated genome sequence of the bacterium via an in-house MATLAB
genome analysis software. Comprising gene name, gene function, and gene
sequence, the gene database of F. sanfranciscensis would aid in
understanding the metabolism of the bacterium, and its unique role in
synthesizing a rich palette of metabolites that lend characteristic taste to
bread.
