The methylotrophic species Candida boidinii belongs to the Ascomycota phylum and is phylogenetically related to the Ogataea clade. Isolates of C. boidinii have been obtained from various natural environments, including soil, seawater, and sap fluxes of many sugar-rich tree species, as well as from samples associated with human activities such as wine or olive fermentations (1). Notably, Candida boidinii IST 350 was isolated from the soaking waters used in olive curation, a unique habitat characterized by low sugar concentrations and relatively high levels of oil, phenolic compounds, and salt (2). This strain demonstrated robust tolerance and catabolism of methanol as the sole carbon source, underscoring the potential of C. boidinii isolates for developing efficient methanol conversion bioprocesses.
