The aim of this study was to investigate the effects of different types of lotus seed resistant starch on susceptibility to food allergy. The results showed that RS3 and RS4 exhibited good antiallergic activity and alleviated allergic symptoms, and the underlying mechanism may involve RS3- and the RS4 type of lotus seed resistant starch profoundly affecting the gut microbiota and its metabolites. These analyses provide new evidence for the regulatory role of lotus seed resistant starch in food allergy and highlight the potential of lotus seed resistant starch to intervene in food allergy.
