The objective of this project is to exhaustively understand the biological basis of meat tenderness, which is considered an important trait for meat quality. Through deep mRNA sequencing, this study is aimed to analyze gene expression in muscle tissues of two Italian cattle breeds, Maremmana and Chianina, to uncover genes controlling meat tenderness and correlated metabolic pathways.
