以大球盖菇次级菇为实验材料, 采用响应面法优化大球盖菇中麦角硫因的提取条件,并且考察温度、pH 和光照等外界环境因素对麦角硫因体外抗氧化能力稳定性的影响。最终结果显示,在最优条件下获得大球盖菇中麦角硫因的最高提取量为(3.192±0.024) mg/g DW,接近预测值; 还发现麦角硫因的体外抗氧化能力受 pH和紫外光照因素影响显著, 受温度因素的影响不显著。这为麦角硫因的后续开发利用提供数据支撑, 也促进了大球盖菇次级菇的高值化利用。

Using secondary fruiting bodies of Stropharia rugosoannulata as experimental materials, this study optimized the extraction conditions of ergothioneine from Stropharia rugosoannulata via response surface methodology, and investigated the effects of external environmental factors including temperature, pH and light on the stability of ergothioneine's in vitro antioxidant capacity. The final results showed that the maximum extraction yield of ergothioneine from Stropharia rugosoannulata under the optimal conditions was (3.192±0.024) mg/g DW, which was close to the predicted value. It was also found that the in vitro antioxidant capacity of ergothioneine was significantly affected by pH and ultraviolet (UV) light, while the effect of temperature was not significant. This work provides data support for the subsequent development and utilization of ergothioneine, and also promotes the high-value utilization of secondary fruiting bodies of Stropharia rugosoannulata.
