Fermented feed is an agricultural practice used in worldwide to improve the growth performance of the farm animals. It is formed by the mixture of bacteria and yeasts that improve the quality of the raw material used in its preparation as well as the sensorial properties contributing also to the intestinal health of animals. In this study, we describe microorganisms isolated from autochthonous microbiota present in a regional feed product. Lactobacillus paracasei IBR07 (Lacticaseibacillus paracasei)can resist and persist at low pH. Therefore, potential pathways involved in acid response were analyzed to improve our knowledge in this response. This strain is considered safe for animal feed, and to be non-human pathogens, and we confirm these results explored in the Galleria mellonellasystem. Thus, the identification of species that can improve the final quality (sensorial and nutritional) of fermented feed constitutes a biotechnological challenge to increase animal production.
