This study focused on the microbial community and succession during Zha-chili fermentation. Then DNA was extracted from samples collected during fermentation. Amplicon sequencing was performed based on full-length16S rDNA and ITS2 sequences. After bioinformatics analysis, the structure and change of microbial community was known, which can be applied as guidance for improving the quality and standard production of Zha-chili.
