The homofermentative thermophilic lactic acid bacterium that is used in the manufacture of Swiss type and long-ripened Italian cheeses, such as Emmental, Grana, and Provolone cheeses. Lactobacillus helveticus H10. This strain is isolated from traditional dairy products of minority nationalities in China. This strain will be sequenced for comparative genome analysis.
