Listeria monocytogenes (L. monocytogenes) is a gram-positive food-derived pathogen ubiquitously in the environment and in various foods, such as raw or processed meat, fish, and cheese and ready-to-eat foods. Phenolic acids derived from flavonoids by the intestinal microflora exhibits antibacterial and antioxidant activity against food-derived pathogen, oxidative radicals and potential health benefits over pharmaceuticals with low-toxicity, which could be used as antibacterial agents in variety of food system and even in vitro. However, transcriptomic levels of phenolic acids on Listeria monocytogenes is still not so clear.
