Biopolymer from water kefir as a potential clean-label ingredient for health applications: evaluation of new properties

The data showed in the documents were obtained in the evaluation of exopolysaccharide from water kefir and reflects the results for: FTIR; XRD; TG/DTG; Photostability assay; Mucoadhesion; Grain Growth. The results showed thermal and photostability, good adhesion in the porcine mucosa (TA.XT texturometer), the growth rate of the grain and also the cryopreservation of kefir grains.本文件所载数据均取自水开菲尔胞外多糖的评估实验，涵盖以下检测项目的结果：傅里叶变换红外光谱（FTIR）、X射线衍射（XRD）、热重/差热重分析（TG/DTG）、光稳定性试验、黏膜黏附性实验以及菌粒生长实验。实验结果表明，该胞外多糖具备良好的热稳定性与光稳定性，在猪黏膜上呈现出优异的黏附性能（采用TA.XT质构仪完成检测），同时测得菌粒生长速率以及克菲尔菌粒的冷冻保存效果。
