16S rRNA amplicon sequencing of Nukadoko. food fermentation metagenome

We deployed 16S rRNA amplicon sequencing in this study to evaluate the impact of the rice bran beds (Nukadoko). Nukadoko utilized in this study was prepared by mixing commercially available rice bran with matured 150-year-old nukadoko. Three participants at both Miraikan and HakkoD were assigned to stir nukadoko on a daily basis at each location. Sample collection took place on specific days, namely 0, 3, 6, 9, 14, 18, 22, and 29 for Miraikan, and on days 0, 3, 6, 9, 15, 17, 22, and 29 for HakkoD using individually wrapped disposable plastic spoons and 50mL polypropylene conical tubes.
