Core genes and regulatory pathways of specific spoilage microorganisms during cold chain preservation of grouper

In this study, genes related to motility, spoilage capacity and spoilage metabolism of wild strain P. fragi V11 and standard strain P. fragi SS were studied. There were differences in genes related to metabolism and flagellar synthesis between the two strains, which might be an important reason for the difference in spoilage ability between the two strains.
