All samples were produced from white cabbages cultivated in South Tyrol and commonly used by local sauerkraut producers. Sauerkraut samples were spontaneously fermented at 15 C for 42 days. Samples were taken at the beginning of fermentation D0, after 0.5 D0.5, 1 D1, 2 D2, 3 D3, 4 D4, 5 D5, 7 D7, 14 D14, 21 D21, 28 D28, 35 D35, and 42 D42 days of fermentation.
