2. Data Detection: After pre-treatment, the samples were detected using instruments such as a constant temperature water bath in accordance with the detection principle of the second method specified in GB 5009.33-2016, and the test data were obtained.
3. Data Judgment: Calculation formula of nitrite content: X=(M2 × 1000 × V0)/(M3 × V1 × 1000). Where X represents the nitrite content of the test sample, with the unit of mg/kg; M2 is the mass of sodium nitrite in the sample solution used for determination, with the unit of μg; V0 is the total volume of the sample treatment solution, with the unit of mL; M3 is the mass of the test sample, with the unit of g; V1 is the volume of the sample solution used for determination, with the unit of mL. The standard requirement for nitrite content in dried eel is ≤20 mg/kg.
4. Data Application: Through analysis and assessment of the sampling inspection data, we can determine whether the nitrite content in dried eel exceeds the standard, avoid food safety problems caused by excessive addition of nitrite, and provide a basis for regulatory work.
