近年来水产品中恩诺沙星超标情况时有发生。恩诺沙星是一类人工合成的广谱抗菌药,可用于治疗动物的皮肤感染、呼吸道感染等,是动物专属用药。人若长期食用恩诺沙星超标的食品,可能导致恩诺沙星在体内蓄积,进而对人体机能产生危害,还有可能使人体产生耐药性,影响软骨发育,导致畸形。通过对不同种类鱼类产品中恩诺沙星残留量进行分析,能了解不同水产品兽药残留情况,并依此进行针对性的安全监管,为水产品食品安全预防和控制提供数据支持和参考。1、数据采集:根据要求采集鱼肉样品并进行样品制备,依据检测方法进行定量分析,获得检测结果值。2、数据处理:通过定量分析获得结果值,依据GB 31650等设定标准值,当结果值≤标准值时,判定符合;否则判定不符合;符合率B=符合批次数A/同类别检测批次N*100%,保留两位小数;检出率D=该类别检出批次数C:29/同类别检测批次N*100%,保留两位小数;风险值R=结果值/标准值,结果保留两位小数。当符合率B≥95%,检出率D≤60%时,评价为dLR;当符合率B≥95%,检出率D>60%时,评价为LR;当90%≤符合率B<95%,检出率D≤60%时,评价为dMR;当90%≤符合率B<95%,检出率D>60%时,评价为MR;当符合率B<90%,检出率D≤60%时,评价为dHR;当符合率B<90%,检出率D>60%时,评价为HR。3、数据应用:对各类鱼肉产品进行恩诺沙星残留量的分析,能了解各类鱼肉产品中兽药使用情况,可为鱼肉产品中恩诺沙星兽药残留的监管提供依据,为水产品食品安全预防和控制提供数据支持和参考。

In recent years, cases of excessive enrofloxacin residues in aquatic products have been reported frequently. Enrofloxacin is a synthetic broad-spectrum antibacterial drug exclusively used for animals, which can treat skin infections, respiratory infections and other diseases in animals. If humans consume food contaminated with excessive enrofloxacin over a long period, the drug may accumulate in the human body, impair bodily functions, induce drug resistance, affect cartilage development, and even cause malformations. Analyzing the enrofloxacin residue levels in different fish products allows us to grasp the veterinary drug residue situation of various aquatic products, carry out targeted safety supervision, and provide data support and references for the prevention and control of aquatic product food safety. 1. Data Collection: Collect fish samples and perform sample preparation according to specified requirements, then conduct quantitative analysis in accordance with standard detection methods to obtain test result values. 2. Data Processing: Obtain test result values via quantitative analysis, and set standard threshold values based on GB 31650 and other relevant standards. A sample batch is judged as qualified if its test result value is less than or equal to the standard threshold, otherwise it is judged as unqualified. The compliance rate B is calculated as (number of qualified batches A / total detected batches N of the same category) × 100%, rounded to two decimal places. The detection rate D is calculated as (number of detected batches C: 29 / total detected batches N of the same category) × 100%, rounded to two decimal places. The risk value R is calculated as (test result value / standard threshold), rounded to two decimal places. The risk evaluation grades are defined as follows: dLR when B ≥ 95% and D ≤ 60%; LR when B ≥ 95% and D > 60%; dMR when 90% ≤ B < 95% and D ≤ 60%; MR when 90% ≤ B < 95% and D > 60%; dHR when B < 90% and D ≤ 60%; HR when B < 90% and D > 60%. 3. Data Application: Analyzing enrofloxacin residue levels in various fish products helps understand the veterinary drug usage status in these products, provides a scientific basis for the supervision of enrofloxacin residues in fish products, and offers valuable data support and reference for the prevention and control of aquatic product food safety.
