Pulque shotgun metagenome

Pulque is a traditional non-distilled alcoholic beverage produced by the fermentation of the sap extracted from various species of Agavaceae. The aim is to obtain a description of the microorganisms involved in pulque fermentation and their interactions in order to support the maintenance of traditional and artisanal practices, the design of the starter culture, the improvement of sensorial quality and the microbial safety control in the final product.
