The objetive of this study is isolate and to identify the fungal taxa capable to resist / grow in sparkling wines, a substrate with extreme physic-chemical conditions as high concentrations of ethanol and carbon dioxide, and even high atmospheric pressure and correlate the production of TCA with the biodiversity.There is a great variety of fungi existing in sparkling wines elaborated in Catalonia, i.e. Alternaria spp., Aspergillus spp., Beauveria spp., Candida patagonica, Cladosporium spp., Penicillium spp., Rasamsonia spp. and Zopfiella ebriosa. We were able to isolate and to identify new taxa from cava in Spain: A new arthrographis-like genus with two new species, two species of Kirschsteiniothelia spp., one species of Rasamsonia sp., one species of Cladophialophora sp. and two species of Talaromyces spp.
