Hydroxy fatty acids are produced by mandibular glands of worker bee, and during brewing and harvesting processes, honey may contain tissue cells, bodily fluids, or limb residues of bees, so it is hypothesized that the differential RNA components involved in the synthesis of hydroxy fatty acids originating from bees can serve as indicators to identify the entomological source of honey. In this project, we analyzed Apis cerana and Apis mellifera. Firstly, the collection of worker bee samples and the isolation of mandibular glands were completed. Subsequently, transcriptomics technology in conjunction with bioinformatics was used to screen for hydroxy fatty acid related differentially expressed genes in mandibular glands of Apis cerana and Apis mellifera honeybee species.
