Saum (also Sa-um) is a traditional fermented pork fat consumed in Mizoram, Northeast India, known for its microbial diversity. This BioProject presents high-quality metagenome-assembled genomes (MAGs) of two probiotic strains and two pathogenic strains recovered from a Saum sample collected in Aizawl, Mizoram (2025). Data elucidate functional profiles, antimicrobial resistance, and probiotic traits relevant to veterinary public health and food epidemiology.
