Lactobacillus helveticus is an important industrial thermophilic starter, predominantly used in the fermentation of milk and in several cheese manufacture. Some studies underlined the capability of many strains of Lactobacillus helveticus to possess a health-promoting potential, mediated by surface protein from their cell envelope. This assembly is from a no previously sequenced strain, L. helveticus ATCC 12046, obtained from the Pasteur Institute, Paris, France.
