Data on the Amylolytic Activity of Triticale

This dataset includes the characterization and measurement of α- and β-amylase activity obtained from triticale malt of the Siglo XXI and Bicentenario varieties. It also comprises data on the enzymatic activity of α- and β-amylase in aqueous extracts derived from the respective malts. Additionally, partial purification data of the enzymes are presented, including their activity after purification using aqueous two-phase systems (ATPS) composed of ethanol and trisodium citrate, as well as partitioning parameters of the ATPS.
