In this work, we use a 60-day chronological lifespan experiment at low temperature to investigate the adaptive dynamics of S. eubayanus. We hypothesized that extended cold exposure could reprograming the transcriptional phenotype, conferring enhanced survival under severe stress. Through a combination of long-term culturing, phenotypic and physiological assays, whole-genome sequencing, and transcriptomic analysis, we examined whether S. eubayanus undergoes a GASP-like evolutionary process and how these changes contribute to its cryotolerance. Our findings provide broader insights into the evolutionary significance of stationary-phase adaptation in wild yeasts, advancing our understanding of microbial adaptation to extreme environments.
