The complex starter culture for artificial pit mud (APMSC) hosts diverse microbial communities that play a crucial role in Chinese strong-flavor Baijiu production.The aim of this study is to reveal the identity of functional microbes associated with high quality CSFB production in APMSC. The data presented within this study will provide guidelines for the future standardization production of APMSC.
