This dataset contains pilot scale processing performance data generated from trials using Vaculiq low oxygen milling and pressing technology combined with Multicut pre processing, applied to second class vegetables and vegetable by products to produce juices and purees. The dataset includes input masses, processing throughput, product outputs, press cake generation, processing time, and calculated yields, enabling basic mass balance and process performance evaluation. The data support comparison and benchmarking of Vaculiq based processing routes, assessment of vegetable by product valorisation potential, and exploratory analysis for sustainable food processing and circular bioeconomy research. Each row represents one independent processing trial and each column represents a specific processing parameter, input characteristic, or output metric. Missing values indicate parameters that were not measured, not applicable, or omitted due to confidentiality constraints.
