Adsorption of proteins to fluid interfaces: Role of the hydrophobic subphase

Collection of interfacial tension reduction data for various fractionated animal proteins adsorbed at oil-water and air-water interfaces, namely lysozyme (LSZ), bovine serum albumin (BSA), beta-lactoglobulin (BLG), and beta-casein (BCAS). The file contains all information on the used hydrophobic subphase (type of oil, air), initial interfacial tension, final interfacial tension, and resulting normalized interfacial pressure, as well as measuring conditions (protein concentration, pH, ionic strength).本数据集收录了多种分级动物蛋白吸附于油水界面与气水界面后的界面张力降低数据，所涉蛋白包括溶菌酶（LSZ）、牛血清白蛋白（BSA）、β-乳球蛋白（BLG）与β-酪蛋白（BCAS）。该数据集文件包含所用疏水亚相的全部相关信息（油类类型、气相类型）、初始界面张力、最终界面张力以及所得归一化界面压力，同时涵盖测量条件参数，具体包括蛋白浓度、pH值与离子强度。
