Whole-genome sequencing and standard microbiological methods were used to help characterize the bacteriocin production from lactic acid bacteria obtained from Boza, highlighting the importance of bacteriocinogenic strains in the food safety of fermented food products. Two Pedicococcus strains were isolated and their genomes caracterized.
