L. lactis subsp. lactis (formerly Streptococcus lactis) is used in the early stages for the production of many cheeses, including brie, camembert, Cheddar, Colby, Gruyere, Parmesan, and Roquefort. Lactococcus lactis subsp. lactis KMGR2-43 is a strain isolated from traditional Makgeolli in the Suwon region of South Korea in 2006. It has very high beta-glucosidase activity and carries the Tetracycline resistance gene (CARD, ResFinder) on its plasmid DNA.
