This dataset accompanies the manuscript "Protease-dependent ACE and DPP-IV inhibitory profiles of food protein hydrolysates revealed by peptidomics and molecular docking." The Excel file contains six worksheets: (1) Master_Peptides — 709 Q-TOF LC-MS/MS identified peptide entries with ACE Rule 5 and DPP-IV rule screening annotations; (2) Summary — peptide counts and rule screening results for 16 hydrolysates; (3) ACE_Rule5_Hits — peptides matching ACE Rule 5; (4) DPPIV_Rule_Hits — 116 DPP-IV rule-conforming peptide entries; (5) Docking_Scores — AutoDock Vina binding energies for 237 unique peptides (7–12 aa) against ACE (PDB: 1O86) and DPP-IV (PDB: 1WCY); (6) In_Silico_Fragments — 1,977 BIOPEP-UWM virtual proteolysis fragments for all 16 protein–enzyme combinations.
