Traditional Chinese soybean pastes were home-made in natural fermentation. In this completely open process, a unique microbial community would be formed as a result of the free drop-in of a great amount of microbes from the air. The Miseq 2×300bp sequencing platform was used in this study, and 16s and ITS were used, as primers, to amplify the bacterial V3-V4 sequence and the fungus ITS1 sequence of soybean pastes samples.
