Human fecal samples were used for in vitro incubations with quercetin. Samples from 9 subjects resuspended at 0.5 mg ml-1 final concentration in anaerobic 7N minimal medium supplemented with 20 mM sodium acetate + Quercetin (0.4 mM). Controls consisted of the same medium plus fecal sample. When quercetin disappearance was visible, 10 % of the culture was transferred to another anaerobic bottle with the same medium. Treatments with quercetin had three replicates and controls one replicate. Sampling was done at the end of the first and second incubation time once quercetin degradation was completed. In a second experiment, combinations of fecal matter from subjects #3 and #4 were done as follows (#3/#4): 0/0.1, 0.1/0.1, 0.1/0 mg ml-1 (1 and 10 mg ml-1 were tested for some cases). Incubations were done again in anaerobic 7N minimal medium supplemented with 20 mM sodium acetate with and without quercetin using three replicates. Sampling was done at 0 and 72 h of microbial growth.
