The gut microbiota has a key role in As metabolism that can be affected by food components. In this study, based on the Simulator of the Human Intestinal Microbial Ecosystem (SHIME) model, the specific effect of different food components on As metabolism by gut microbiota was explored. Changes in Alpha diversity, Beta diversity and relative abundance at the phylum and genus levels, as well as Linear Discriminant Analysis Effect Size, were detected. Strong correlations were examined in genera-As metabolism. The pivotal role of food components in influencing arsenic metabolism by the gut microbiota was underscored.
