Title: Reduction of Salmonella Infantis on Skin-On, Bone-in Chicken Thighs by Cetylperidinium Chloride Application and the Impact on the Skin Microbiota.Summary: Salmonella Infantis has been the etiological agent of numerous foodborne outbreaks of non-typhoidal Salmonella. Consequently, there is an emergent need to study Salmonella Infantis among poultry and poultry products. Thus, this study evaluated the efficacy of cetylpyridinium chloride (CPC), versus peroxyacetic acid (PAA), the standard poultry processing antimicrobial, on bone-in, skin-on chicken thighs for the reduction of Salmonella, as well as the changes in the microbiota.
