This dataset contains the supporting calculations and data for the paper titled 'Validation of Ohmic Heating Pilot Plant for Vitamin C Retention and E. coli Surrogate Inactivation on Strawberry Nectar.' The files include: Calculations related to the kinetics of Vitamin C in strawberry nectar and buffer solution. Data on the kinetics of inactivation of E. coli surrogate in strawberry nectar and buffer solution. Kinetic models for Vitamin C degradation and microbial reduction. Calculations related to the retention of Vitamin C in strawberry nectar and model solution subjected to Ohmic heating. These data were used to validate the pilot-scale Ohmic heating system and compare the experimental results with predicted models. The files are provided in Excel format for ease of use.
