Monitoring of bivalve flesh for the statutory faecal indicator E.coli is a requirement under retained EU Regulation 2019/627 to allow the classification of bivalve mollusc harvesting areas according to their faecal pollution status. Classification categories (A, B or C) are assigned on the basis of the data according to the regulatory requirements and the Food standards Agency protocol published here: `Shellfish classification | Food Standards Agency`_ The classification categories determine the level of shellfish processing required prior to human consumption.
