Virgin coconut oil (VCO) is an essential oil for the industry in Southeast Asia, and it made by fermentation by bacteria. Lactic acid bacteria are one of the common bacteria species used for the fermentation of coconut milk to produce VCO. During the fermentation, lactic acid bacteria produce organic acid, hydrogen peroxide and bacteriocin. However, lactic acid and bacteriocin productivity are changed in acidity and salinity. In this study, we assess the productivity under saline stress condition, pH and temperature by L. plantarum isolated from virgin coconut oil. We isolated L. plantarum COY 2906 from VCO and identified genome sequence because the genetical approach facilities to understand the mechanism of bacteriocin production.
