Streptococcus thermophilus natural activity makes this species the most used thermophilic starter culture for yogurt and cheese manufacture. The tendency of some S. thermophilus strains to the biofilm attitude in milk environment and the molecular basis and gene-exchange episodes driving the adhesion and survival on stainless steel surfaces have been studied.
