F1493 is a microorganism isolated from the surface of traditional Korean fermented soybean paste(Meju), and was identified as Pediococcus acidilactici through 16S rRNA sequencing and whole genome analysis. This microorganism does not show activity for protease, lipase, esterase, or amylase, but has very high activity for beta-galactosidase and beta-glucosidase.
