There are five categories of data. The first one named all raw data composed of PAHs determined in 54 sampled rice recipes. Only 11 out of the 16 prioritized PAHs were obtained. All the values reported are presented in mg/kg. For the 54 samples collected, each percentage contamination of the specific PAH has also been reported. Three main PAH groups that show carcinogenicity have been presented in category two. There are three main PAH groups: total benzo-a pyrene, PAH 4 types and PAH 8 types; however, three PAH 8 and two PAH 4 members were obtained. The data presented here can only be processed if Palisade @Risk software version 7.2 onwards is installed. Essentially, the authors were interested in the elements for determining exposure and risks. Secondary data has also been incorporated and cited appropriately. Users would have to install the statistical software before running the analysis. Category three displays only the distributions of the concentrations of the PAH types processed under category two. They present the type of distribution and show the 5th and 95th percentile concentrations together with the modal, min, max, mean and standard deviation. The user must again install Palisade @Risk for category four before running the data presented. The data presents the exposure and risk determination elements for the individual non-cancer PAHs determined from the sampled rice recipes. Category five displays only the distributions of the concentrations of the PAH types processed under category four. They present the type of distribution and show the 5th and 95th percentile concentrations together with the modal, min, max, mean and standard deviation.
