Acceptability of insect-fortified snacks among school children in Madagascar

Edible insects have been an important part of the human diet throughout history. They represent a low-cost, climate friendly, and culturally acceptable food in Madagascar, with nutritional profiles akin to meat. Insects contain valuable bioavailable protein, iron, zinc, and fiber. In this acceptability study, we determined that three different recipes of our insect-fortified snack crackers are safe, nutritious, and acceptable to children.

自古以来，食用昆虫便是人类饮食的重要组成部分。在马达加斯加，食用昆虫是一种低成本、气候友好且为本土文化所接纳的食物，其营养成分与肉类相近。昆虫富含高生物利用度的优质蛋白质、铁、锌与膳食纤维。在本次可接受性研究中，我们证实三款添加昆虫强化成分的零食脆饼配方对儿童而言安全、营养且易于被接受。
