In order to understand the microbial community composition of the fermented grains during liquor fermentation process, we collected the sample in a distillery located in western China and performed high-throughput sequencing on them.为解析白酒发酵过程中酒醅的微生物群落组成，我们于中国西部某酿酒厂采集样本，并对其开展高通量测序。
