This dataset includes raw experimental data from the microbial-enzyme co-fermentation of mulberry branches and leaves (MBL), covering:1. Nutrient composition data (e.g., crude protein, neutral detergent fiber) of MBL samples at different fermentation time points;2. Antioxidant activity data (e.g., DPPH scavenging capacity) of MBL samples at different fermentation time points;3. Bioactive compounds (e.g., polyphenols , flavonoids) of MBL samples at different fermentation time points;4. Microbial community 5.
