<p>This dataset includes (I) UPLC-PDA chromatographic data of <em>Melissa officinalis</em> phenolic compounds after incubation with <em>Lactobacillus</em> and <em>Bifidobacterium</em> strains; (II) digestion data for <em>L. acidophilus</em>-transformed extract with and without non-starch polysaccharide matrices; (III) phenolic contents and digestion indices (BI%, RI%, RID%); (IV) spectrophotometric antioxidant and antidiabetic activities; and (V) statistical analyses (ANOVA, AHC, PCA, correlations, heat maps).<br /></p>
本数据集包含以下五部分内容:(I) 与乳杆菌属(Lactobacillus)、双歧杆菌属(Bifidobacterium)菌株孵育后,香蜂草(Melissa officinalis)酚类化合物的超高效液相色谱-二极管阵列检测器(UPLC-PDA)谱图数据;(II) 经嗜酸乳杆菌(L. acidophilus)转化的提取物在添加与未添加非淀粉多糖(non-starch polysaccharide)基质条件下的消化数据;(III) 酚类物质含量及消化指数(BI%、RI%、RID%);(IV) 分光光度法测定的抗氧化与抗糖尿病活性;(V) 各类统计分析,包括方差分析(Analysis of Variance, ANOVA)、分层聚类分析(Agglomerative Hierarchical Clustering, AHC)、主成分分析(Principal Component Analysis, PCA)、相关性分析及热图。
