Effects of different logistics packaging methods on the quality and microbial variation of bigeye tuna (Thunnus obesus)

Bigeye tuna (Thunnus obesus) is one of the most economically valuable ocean fish species. However, it is susceptible to corruption during storage and transportation, and maintaining a healthy environment during the transportation is critical to preventing quality deterioration. The influence of packaging on freshness retaining in transportation engineering have been the focus of very little research. As a result, the current study investigated the impact of different transportation packaging on the quality and microbiological diversity and variation of bigeye tuna during the logistics process. The results showed that the aluminum foil paper (AFP) group had minimum temperature fluctuation during transportation and possessed preferable water retaining capacity and color protection effect. AFP transport packaging efficiently prevented the creation of total volatile basic nitrogen content (TVB-N) and the microbial growth. After 40 h, the TVB-N was 21.28 mg/100 g and the microbial total plate count was 3.53 log10 CFU/g, both of which were within the acceptable range. Temperature fluctuations and packaging materials used during transportation had a major effect on the microbial community structure of bigeye tuna, the AFP group had Chitinophagaceae, Acinetobacter and Knoellia as the dominant bacteria, while the expanded polystyrene foam (EPSF) and European logistics (EUL) groups had Pseudomonas, Acinetobacter and Macrococcus as the dominant bacteria. The AFP box transport packaging, on the other hand, was found to decrease the growth and reproduction of Pseudomonas to a certain extent. Overall, AFP packaging may effectively restrain the growth of microorganisms spoiling the freshness and preserve the quality of bigeye tuna.

大眼金枪鱼(Bigeye tuna,Thunnus obesus)是经济价值最高的海洋鱼类品类之一。然而,该鱼种在储存与运输过程中极易发生腐败,维持运输环节的健康环境对延缓品质劣变至关重要。目前针对运输工程中包装对保鲜效果的影响相关研究相对匮乏。为此,本研究探讨了不同运输包装方案在全物流过程中对大眼金枪鱼品质、微生物多样性及其变化的影响。结果显示,铝箔纸(aluminum foil paper,AFP)组在运输过程中的温度波动幅度最小,且具备更优异的保水性能与护色效果。AFP运输包装可有效抑制总挥发性盐基氮(total volatile basic nitrogen content,TVB-N)的生成与微生物增殖。运输40小时后,其TVB-N含量为21.28 mg/100 g,总平板菌落数为3.53 log₁₀ CFU/g,两项指标均处于食品安全可接受范围内。运输过程中的温度波动与所使用的包装材料对大眼金枪鱼的微生物群落结构具有显著影响:AFP组的优势菌群为噬几丁质菌科(Chitinophagaceae)、不动杆菌属(Acinetobacter)与诺尔斯菌属(Knoellia);而发泡聚苯乙烯泡沫(expanded polystyrene foam,EPSF)组与欧洲物流(European logistics,EUL)组的优势菌群则为假单胞菌属(Pseudomonas)、不动杆菌属与巨球菌属(Macrococcus)。另一方面,AFP箱式运输包装可在一定程度上抑制假单胞菌属的生长繁殖。综上,AFP包装可有效抑制破坏保鲜品质的微生物生长,切实维持大眼金枪鱼的产品品质。
