The Project is focused on the study, understanding and exploitation of aerobic and respiratory metabolism in wild and mutant strains of Lactobacillus casei group. In particular, the effect of aerobic and respiratory metabolism on the growth, stress tolerance, proteomic and metabolic profiles has been investigated in different strains of L. casei group, in order to improve survival of starter and probiotic cultures and to enhance the nutritional and technological properties of fermented foods. A complex approach based on transcriptomic, proteomic and metabolomic analyses has been used to carry out all research activities.
本项目聚焦于干酪乳杆菌群(Lactobacillus casei group)野生型与突变菌株的有氧代谢与呼吸代谢的研究、解析与开发应用。具体而言,本研究针对该菌群的不同菌株,探究了有氧代谢与呼吸代谢对其生长性能、胁迫耐受性、蛋白质组学(proteomics)与代谢组学(metabolomics)特征的影响,以期提升发酵剂与益生菌培养物的存活率,并改善发酵食品的营养与工艺特性。本研究采用基于转录组学(transcriptomics)、蛋白质组学与代谢组学分析的多组学整合研究策略,完成全部科研工作。
