根据国家食品安全的要求,饼干中过氧化值的指标多少是产品是否达标的一项重要且强制性标准,检测出来的过氧化值越低,代表产品的品质和质量越高,本数据对脆烤曲奇产品的过氧化值作出检测,为企业生产及政府监管做出参考,为消费者购买该产品提供参考依据。1、产品检测:对脆烤曲奇进行抽样检测,每次检测样本质量约2.6g左右,准备浓度为0.002mol/L硫代硫酸钠标准溶液,样本经过处理,检测出样本消耗硫代硫酸钠标准液的体积并记录,同时做空白试验,检测出空白试验消耗硫代硫酸钠标准液的体积并记录;2、数据处理:过氧化值=(样本消耗的硫代硫酸钠标砖溶液体积-空白试验消耗的硫代硫酸钠标砖溶液体积)*硫代硫酸钠标准溶液的浓度*0.1269*100/样本质量,样本中过氧化值≦0.25g/100g,则判定该产品为合格;3、根据GB 5009.227-2016 食品安全国家标准 食品中过氧化值的测定标准,判断样品中过氧化值是否达到国家标准;4、对脆烤曲奇产品过氧化值的检验检测,为企业生产和政府把控食品品质和质量做出有效参考,对食品安全具有重大意义。

The lower the detected peroxide value, the higher the product quality. This dataset conducts peroxide value tests on crispy baked cookie products, providing references for enterprise production, government supervision, and consumer purchasing decisions. 1. Product Testing: Conduct sampling tests on crispy baked cookies, with each test sample weighing approximately 2.6g. Prepare a 0.002 mol/L sodium thiosulfate standard solution. Process the samples, measure and record the volume of sodium thiosulfate standard solution consumed by the samples, and perform a blank test at the same time to measure and record the volume of sodium thiosulfate standard solution consumed by the blank test. 2. Data Processing: Peroxide value = (Volume of sodium thiosulfate standard solution consumed by the sample - Volume of sodium thiosulfate standard solution consumed by the blank test) × Concentration of sodium thiosulfate standard solution × 0.1269 × 100 / Sample mass. If the peroxide value in the sample is ≤ 0.25 g/100g, the product is judged as qualified. 3. Determine whether the peroxide value of the sample meets the national standard in accordance with GB 5009.227-2016 National Food Safety Standard - Determination of Peroxide Value in Foods. 4.
