The degradation of pit mud in fermentation cellars seriously compromises the quality of Chinese strong-flavor Baijiu (SFB). In this study, a biological mixture produced from brewing wastes was used to restore degraded pit mud (DPM). The prokaryotic communities in the restoration and subsequent brewing period were investigated by metagenomics.The results demonstrate that brewing wastes can be reused to restore DPM. Generally, these findings could aid the development of new sustainable strategies to produce high-quality SFB.

发酵窖池的窖泥退化会严重劣化中国浓香型白酒(Chinese strong-flavor Baijiu,SFB)的品质。本研究采用酿酒废弃物制备的生物复合制剂对退化窖泥(degraded pit mud,DPM)进行修复,并通过宏基因组学技术分析了修复阶段及后续酿造周期中的原核生物群落结构。研究结果表明,酿酒废弃物可被回收利用以修复退化窖泥。总体而言,本研究发现可为开发高品质浓香型白酒的可持续生产新策略提供参考依据。
