1、数据采集:确定卤笋基本制作工艺,包括侵泡、煮制;确定膨化工艺关键技术,包括采用微波膨化机、微波辐射时长及功率;确定卤制所需材料,包括鲜笋、食盐、酱油、八角茴香、干尖辣椒等。
2、数据处理:根据确定好的卤制所需材料、卤笋基本制作工艺和膨化工艺关键技术,进行试制,并记录试制过程的数据,根据试制效果,对试制过程各项数据进行对比分析,统计和调整,确定最终的制备工艺数据,生成膨化卤笋制备工艺数据集,包括工艺总流程、工艺步骤、工艺名称、原料/中间产物、核心操作流程、使用设备、关键工艺参数等。
3、数据应用:可用于竹笋食品生产加工企业、膨化卤制品生产加工企业等农产品加工企业的生产研发环节,改善膨化卤制农产品的加工工艺,提高口感,增加产品类型,优化生产效率,管控产品品质。
1. Data Collection: Confirm the basic processing technology of braised bamboo shoots, including soaking and boiling; identify the key technologies of the puffing process, including the adoption of microwave puffing machines, microwave radiation duration and power; determine the ingredients required for braising, including fresh bamboo shoots, table salt, soy sauce, star anise, dried chili peppers and other seasonings.
2. Data Processing: Conduct trial production based on the confirmed braising ingredients, basic processing technology of braised bamboo shoots and key technologies of the puffing process, record the data generated during the trial production, conduct comparative analysis, statistics and adjustment on various data in the trial production process according to the trial production effects, confirm the final preparation process data, and generate the puffed braised bamboo shoot preparation process dataset, which covers the overall process flow, process steps, process names, raw materials/intermediate products, core operation procedures, equipment used, key process parameters and other contents.
3. Data Application: This dataset can be applied to the production and R&D links of agricultural product processing enterprises such as bamboo shoot food production and processing enterprises and puffed braised product production and processing enterprises, so as to improve the processing technology of puffed braised agricultural products, enhance the taste, enrich product categories, optimize production efficiency and control product quality.
